Snapper in Australia.

These fish are called snapper and they come into our bay once a year for about 3 months and this is when we all target them.

Where is "our bay"? What part of Australia?

There is actually 2 water ways here in Melbourne which hold snapper from late spring to mid summer.
I fish mainly Port Phillip Bay and the one is Western Port.

Looks like a tough fighting fish. I imagine by the cooler full that they are good eating fish? What is the lure/bait of choice?

They sure do fight hard especially on light gear.
I love the taste of snapper ,I like to fillet them and then cover them in flower and fry in a pan,the kids also love snapper that way.

Id say you don't have this bait your way but we use Pilchards , silver whiting ,squid and heaps more baits when we can get them fresh from the market.
Soft plastics they like berkley 5 inch jerk shads in any color.
