I've used this ONE for a while. you can eliminate the cream stuff for a healthier choice.

Heywood,

Can't say that I've made this exact recipe, but it looks as close to the real-deal SoCal fish taco as I can dig up. After moving here from San Diego, a proper fish taco is something I truly miss, along with the occasional In and Out double double, and cooler evening temps.

It has been on my list for months now to start a mission to develop my own "best" fish taco recipe. You've motivated me again- Thank you.

Always wondered how trout or redfish would work out, let me know your results if you think about it.

...and grilled fish is definitely healthier, but the authentic (Ralph Rubio Style) is beer battered and fried served with a corn tortilla, cabbage, the mayo/yogurt white sauce, lime and an ice cold cerveza. For me, all the other variations can be adjusted for style points - like home made pico de gallo, hot sauce, avacado, cheese, etc...

Ingredients

1 cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup beer

1/2 cup plain yogurt
1/2 cup mayonnaise
1 lime, juiced
1 jalapeno pepper, minced
1 teaspoon minced capers
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon dried dill weed
1 teaspoon ground cayenne pepper

1 quart oil for frying
1 pound cod fillets, cut into 2 to 3 ounce portions
1 (12 ounce) package corn tortillas
1/2 medium head cabbage, finely shredded

Directions

1. To make beer batter: In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture (don't worry about a few lumps).
2. To make white sauce: In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne.
3. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
4. Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fry tortillas; not too crisp. To serve, place fried fish in a tortilla, and top with shredded cabbage, and white sauce.

Hope this helps.

Not a Cali style fish taco, but I have gotten my wife to eat them ( 1 of 2 women in the house ).

We take the Gordens fish fillets and nuke them.
My wife makes homemade coleslaw (long shred cabbage).
Add to soft flour tortees (sp) and I like some lime and/or lemon juice.
Quick and easy. I want to try it with grilled Redfish some time.

Ozona Blue has some great fish tacos and even Crabby Bill's has them now, but not as good. I rarely use recipes for anything and fish tacos are no different.

1. Grille some fish (I prefer Mahi Mahi for fish tacos).
2. Get some fresh salsa (not the cooked kind).
3. Shred some lettuce.
4. Place on a warmed soft flour taco.
5. Top with some Chipotle sauce.
