Boiled Ribs!

Short Ribs braised in wine.

Brown ribs a few at a time til all are done.

Once ribs are browned remove and add the holy trinity of carrots, celery and onion. A shite load of garlic won't hurt either.

Soften the veggies in the oil from the ribs.
Image

After sauteing the veggies add a bottle of Bordeaux.
Image

Once tender remove ribs from liquid and puree...
Image

Serve with a Roquefort polenta and sauteed veggies.

Short ribs are one of my favorites. Like butta. Nicely done sir.
