I am planning on catching some fish tomorrow and need a good smoked fish recipie.

I used smoked trout for the first time over the weekend. Don't know if I'll ever go mackerel fishing again. The trout lent a wonderful richness to the dip. Also added 3 hard boiled eggs to the mix. Best I have ever made.
Mayo
S. cream
Scallion
Cumin
Old bay
Celery seed
Ground coriander
Worsterchire
Mild hot sauce ( like Franks)
Celery
Paprika
Some minced dill pickles
Salt but don't salt till you taste. May not need it with the pickles and hot sauce.

Oh yeah. I smoke the trout with old bay, Everglades seasoning and brown sugar.

I have yet to smoke a trout, been smoking the bluefish and macks, but now that you have made it sound so good it will be next.

Helen's Famous Smoked Fish Dip
2 cups smoked fish meat
1/2 cup mayonnaise
1/4 cup chopped scallions
1/4 cup chopped celery
1/4 cup chopped gherkin pickles
1 tbsp tobasco sauce
Juice of 1 lemon
Salt and pepper to taste
I use my favorite bbq rub heavy on the fish while smoking and no further seasoning. You can moderate the tobacco sauce if there are sensitive pallets. Great with Spanish and kingfish. Better with tuna, Mahi, cobia. Never any complaints.
