You want to control the shutter speed, so go for S. P will also work, but this tends to give you average aperture and shutter values and that may not be what you want. Just a tip, don't shoot old propeller driven planes with a very high shutter speed, this freezes the prop and nothing looks as silly...

Trees and water are generally not good HDR subjects, they move too much and you get the ghost effect. Try the inside of a building with light shining in through a window and dark corners somewhere. Thanks for the link, I was there this past Saturday am and it is a nice site, I will definitely go back. The smell from dead fish was really bad, early morning very bad breath stick in the back of your throat bad - I would wait a while before going back there.
